Anchovy sandwich

Ingredients for one portion:
5 anchovies
Bread flour
Eggs
Panko breadcrumbs
Red cabbage
Greek yoghurt
Mayonnaise
Salt
Pepper
Vinegar
Garlic scopes
Sandwich

Procedure: Clean the anchovies (remove the head and the entrails) and filet and butterfly them, making sure the tail remains intact for them to retain the shape and to be easier to cook.
Bread the anchovies: dust them with bread flour. Place the beaten eggs and then in the panko breadcrumbs and again in beaten egg and panko breadcrumbs. Fry the breaded anchovies in hot oil.

Red cabbage salad as a side dish: shred the red cabbage and season using Greek yoghurt and a little mayonnaise; add salt and pepper and vinegar as desired.
